01 - 8 slices whole wheat or white sandwich bread

02 - 120 g (4 oz) cream cheese, softened
03 - 2 tablespoons mayonnaise
04 - 1/4 red bell pepper, finely diced
05 - 1/4 yellow bell pepper, finely diced
06 - 1/4 cucumber, finely diced, seeds removed
07 - 1 small carrot, peeled and grated
08 - 2 tablespoons chives or green onions, finely chopped
09 - Salt and freshly ground black pepper, to taste
→ Decoration (optional)
10 - 2 cherry tomatoes, sliced
11 - 2 tablespoons pomegranate seeds
12 - Fresh basil or parsley leaves
# How to Make It:
01 - Using a star-shaped cookie cutter, cut a star from each bread slice and set aside the scraps for other uses.
02 - In a mixing bowl, blend the cream cheese and mayonnaise until smooth and creamy.
03 - Fold in the finely diced red and yellow bell peppers, cucumber, grated carrot, and chopped chives. Season with salt and freshly ground black pepper.
04 - Spread a generous layer of the vegetable cream cheese mixture onto half of the star-shaped bread pieces.
05 - Place the remaining star-shaped bread pieces on top to form sandwiches.
06 - Gently press slices of cherry tomato, pomegranate seeds, and fresh basil or parsley leaves onto the top of each sandwich to resemble jewels.
07 - Arrange the sandwiches on a platter and serve immediately, or cover and refrigerate for up to 2 hours before serving.
