01 - 14 oz black wax-coated aged cheddar (block or wedge, whole and uncut)

→ Accompaniments

02 - 5.3 oz dark rye crackers
03 - 3.5 oz whole almonds
04 - 1 tablespoon food-grade activated charcoal powder
05 - 1 teaspoon flaky sea salt (optional, for almonds)

→ Garnish (optional)

06 - Fresh rosemary sprigs
07 - Edible black flowers (such as viola or pansy, optional)

# How to Make It:

01 - Remove the black wax-coated cheddar from the refrigerator and allow it to reach room temperature for 20–30 minutes to enhance its flavor.
02 - In a small bowl, toss whole almonds with activated charcoal powder until evenly coated. Add flaky sea salt if desired.
03 - Place the whole block or wedge of black wax cheddar upright in the center of a large, flat serving platter to create a mountain peak effect.
04 - Circle the dark rye crackers around the cheese block, forming the base of the mountain.
05 - Scatter the charcoal-dusted almonds around the crackers, filling gaps and providing visual contrast.
06 - Decorate the platter with fresh rosemary sprigs and, if using, edible black flowers for a striking presentation.
07 - Present immediately, allowing guests to slice cheese from the peak and enjoy with crackers and almonds.

# Expert Advice:

01 -
  • It's a showstopper that requires zero actual cooking—just strategic arrangement and a little black magic with charcoal.
  • The bitter edge of activated charcoal on warm almonds plays beautifully against the creamy, sharp cheddar in ways that feel unexpected.
  • Your guests will assume you spent hours perfecting this, but it's genuinely fifteen minutes of satisfying kitchen theater.
02 -
  • Charcoal is potent—a little goes a long way, and using too much makes the almonds taste chalky rather than sophisticated. I used an entire tablespoon once and regretted it immediately.
  • The cheese needs that warmup time or it'll taste locked and hard. This isn't a shortcut you can skip if you want people to actually enjoy eating it, not just admiring it.
03 -
  • Score the top of the cheese block lightly with a sharp knife before serving so guests know they're meant to carve into it—it transforms the presentation from static sculpture into interactive centerpiece.
  • Keep a small cheese knife or spreader near the peak so people don't feel awkward figuring out how to portion it themselves; the theater only works if everyone feels invited to participate.
