Greek Chicken Pasta Bowl (Printable)

08 - 10 ounces short pasta (penne, fusilli, or rotini)

10 - 1 cup cucumber, diced
11 - 1/2 cup Kalamata olives, pitted and sliced
12 - 1/2 small red onion, thinly sliced
13 - 3.5 ounces feta cheese, crumbled

→ Dressing

15 - 2 tablespoons extra virgin olive oil
16 - 1 tablespoon red wine vinegar

# How to Make It:

01 - In a bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken breasts and marinate for at least 15 minutes or up to 2 hours for enhanced flavor.
02 - Cook pasta according to package instructions. Drain and rinse with cold water until cooled completely.
03 - Heat a grill pan or skillet over medium heat. Remove chicken from marinade and cook for 6 to 7 minutes per side until fully cooked. Let rest for a few minutes, then slice thinly.
04 - In a large bowl, combine cooled pasta, cherry tomatoes, cucumber, olives, and red onion.
